Here’s a little baking cheat for when the holiday season gets hectic,
& you just need a quick & easy party hack.
this cake is like NYE confetti & bubbly wine & a midnight party all in one!
it’s dressed in its sparkling best,
& positively glows & glitters with the excitement of a new year!

the taste of sweet champagne lingers alluring on the tongue,
& fits the celebratory mood of the night.
i’ve also topped my cake off with some rose & champagne brownie pops,
because you can never have too much champagne this party season!

Ingredients

For the cake
1 white cake mix (keep it simple to let the champagne flavour come through)
Champagne (pick your favourite or the cheapest you can find)

Method

1. Preheat oven according to the instructions on the cake mix box. Grease & line your cake pan (how much cake will depend on the cake mix that you get).
2. Follow the instructions on the cake mix box, but substitute all the liquids for the champagne. Make sure the champagne isn’t flat, or the cake won’t be as fluffy.
3. Gently mix ingredients together, & pour batter into your pan.
4. Bake as instructed on the box. Cool. Decorate with glitter & sprinkles. Serve with more champagne!

& because it’s still the perfect time to enjoy a slice of Christmas magic while it lasts,
have a go at this super festive spiced cake!
don’t you love how gingerbread lures you into the Christmas spirit all over again? xo
