Christmas isn’t the same without a few traditions,
& a glorious celebration cake
dressed in ’tis-the-season botanicals is the cutest thing ever!

it’s festively delicious & heady with gingerbread spices,
& rounds up the Christmas meal perfectly.
the mascarpone frosting adds a touch of heavenly decadence to the caramel-y depth of the spices & molasses,
& you’ll be chopping away at the bottom of this tree in no time!


For the cake
1½ cups all purpose flour (levelled-off in a measuring cup with back edge of knife)
1 teaspoon baking soda
½ teaspoon salt
2 teaspoons ground ginger
1 teaspoon ground cinnamon
¼ teaspoon ground cloves
¼ teaspoon ground nutmeg
Pinch of ground cardamom
Pinch of ground allspice
⅔ cup dark brown sugar
⅔ cup molasses or treacle (not Blackstrap or anything too strong)
⅔ cup boiling water
1 large egg

For the mascarpone frosting
225g mascarpone, softened
225g unsalted butter, softened
250g icing sugar
1-2 teaspoons vanilla extract


1. Preheat oven to 175˚C/350˚F. Grease & line two 6″ pans (this recipe makes a 2×6″ layered cake).
2. In a medium bowl, whisk together flour, baking soda, salt, & spices. Set aside.
3. In a large bowl, combine butter, dark brown sugar, molasses/treacle & boiling water. Whisk until butter is melted. When mixture is luke warm, whisk in egg.
4. Add dry ingredients to wet ingredients & whisk until just combined, with no more lumps. Pour batter into prepared pans & bake for about 35 minutes, or until the edges look dark & the middle feels firm to the touch.
5. If eaten warm & cosy, cool slightly on rack, then serve (this cake can be served reheated). Otherwise, cool completely before filling with frosting & stacking.

For the mascarpone frosting
1. Beat icing sugar & butter with an electric mixer on medium-high speed until thick & creamy, 4 to 5 minutes.
2. Beat in vanilla.
3. Add mascarpone, & beat on low speed just until combined. (Do not overmix or the mascarpone will start to break down & the frosting will become too thin.)
