blueberry & rose yoghurt cake

Happy New Year folks!
have some cake, toast some sweet cider,
& here’s to new adventures!
hello 2013!

Ingredients

For the cake
250g (2 cups) all-purpose flour
1½ tsp baking powder
½ tsp baking soda
3 eggs
125g (1 cup) greek yoghurt
⅓ cup unsalted butter (softened)
½ tsp salt
¾ cup caster sugar
2 tbsp honey
2 tbsp rosewater
a punnet of blueberries

To serve: icing sugar

For the ice cubes
a box of dried edible rosebuds

Method

1. Set the oven to 180˚C/350˚F. Line a baking pan with parchment paper, & grease with butter & flour.
2. With a paddle mixer, beat butter & sugar until light & fluffy. Then, add one egg at a time, until fully incorporated.
3. In a medium bowl, combine the flour, baking powder, baking soda & salt. In a separate bowl, stir together the yoghurt, rosewater & honey.
4. Whisk the flour mixture & the yoghurt mixture in alternate cycles in the mixer, beginning & ending with the flour mixture.
5. Flour the blueberries & toss into the batter, before transferring into pan.
6. Bake for 45-60 mins or until a skewer through the cake comes out clean. Let cool in cake pan for 10 minutes, before transferring to rack to cool completely.
7. Finally, dust with icing sugar & serve.

For the ice cubes
1. Half-fill ice trays with water, place a rosebud in each slot & freeze for a few hours.
2. Fill with more water & freeze until solid.
3. Decadently drop over your favourite cider.
